9/11



I guess a rainy dreary day is perfect for the 8th anniversary of 9/11...

no track today it is way too rainy and windy, but hopefully i'll get out later today...

I found this great recipe online for jambalaya that my wife and i are going to try and make for dinner tonight...it uses turkey sausage and chicken instead of high fat, high calorie pork...i'll make sure to give a full report later.

So far today we're doin' good...

Breakfast:
Cheerios and milk : 300 calories
Lunch:
Lettuce: 12 calories
Eggs: 144 calories
1/2 serving seeds: 85 calories
1/2 serving mix of chickpeas and northern beans: 50 calories
Ranch Salad dressing: 80 calories

Ingredients

  • 8 ounce(s) turkey andouille sausage, sliced 1/4 inch thick
  • 1 green or yellow pepper, chopped
  • 1 can(s) (14 1/2-ounce) stewed tomatoes
  • 1 cup(s) uncooked instant brown rice
  • 8 ounce(s) chicken tenders, each cut crosswise in half
  • 1 bunch(es) green onions, sliced

Directions

  1. Heat 12-inch skillet on medium until hot. Add sausage and pepper, and cook 5 minutes, stirring occasionally.
  2. Stir in tomatoes with their juice, rice, chicken, 1/2 cup water, and 1/4 teaspoon salt; heat to boiling on high. Reduce heat to low; cover and simmer 10 minutes or until rice is just tender. Remove skillet from heat; stir in green onions.

Whenever we try a new recipe I'll post it then tell you if it's any good...or i guess i should do it backwards and try it first because if it tastes like dog food then i'm posting gross recipes for no reason...this recipe looks easy and like it would taste good...i realize it has a pretty high amount of sodium but we've had little salt so far today and are drinking lots of water, besides, look how good it looks in the photo...

ok i'll post again later...

it's later...dinner was fantastic...the jambalaya had very little heat so i added some red pepper flakes and hot sauce...my wife added some garlic salt....it was very easy to make and we'll make it again soon...we gave the kids the milder version and they liked it as well. One serving was not really enough for a main meal but we split the leftovers so let's call it approximately a 500 calorie meal.

Total Calories for Today: 1,171...whooohooooo...by the way, still raining...boo, will try to jog or take the dogs for a walk tonight...
