



today we ate breakfast, took the kids to school, walked to the track, jogged my 2 miles and walked home...we are going to make another cook yourself thin recipe today for dinner-- skinny spaghetti and meatballs...i'll give my review tonight...we have to run some errands then tonight is the kids' halloween dance...
here's what i ate so far today--
cereal: 240 calories
salad with lettuce, ranch dressing, 2 egg whites, almonds: 162 calories
ham: 110 calories
Total so far 512 calories
looking forward to pigging out a little on spaghetti and meatballs tonight :)

the spaghetti and meatballs was awesome...i actually made it myself so you know it was easy...my wife also made dessert too and that was also yummy...here are both recipes-
Skinny Spaghetti
Serves 4Calories per serving: 5602 12-ounce to 14-ounce jars of your favorite marinara sauce
2 slices of your favorite sandwich bread
3/4 cup water
1/3 pound ground veal
1/3 pound ground pork
1/3 pound ground turkey
1/2 cup grated Parmesan cheese, plus more for serving
1 large egg
1/2 small onion, finely minced
1/3 cup chopped parsley
2 tablespoons chopped basil
1 teaspoon oregano
1 teaspoon salt
1/4 teaspoon red pepper flakes
8 ounces whole-wheat spaghetti
1. Heat marinara sauce in a large, wide pot over medium heat. Cover to prevent splattering.
2. Remove crusts from bread, place bread in a medium bowl and pour water over. Let sit 10 minutes, and gently squeeze out excess liquid. Put bread in a large bowl; discard water.
3. Add all the ground meats, cheese, egg, onion, parsley, basil, oregano, salt and red pepper flakes to bowl with bread. Gently toss to combine, maintaining a light touch to keep air in the meatballs (don't squish the meat too much, or you'll end up with tough meatballs). Roll the meat mixture in your hands to create meatballs slightly larger than a golf ball.
4. Remove marinara sauce from heat to prevent splattering, and gently drop the meatballs in the warm sauce. Return tomato sauce to medium-low heat, bring to a simmer and cook, covered, until meatballs have cooked through, about 30 minutes.
5. Cook pasta according to package directions, toss with marinara sauce and top with meatballs.
Peanut butter and chocolate dream bars
Serves 8Calories per serving: 1571/2 cup low-calorie thin chocolate wafers, finely ground in a food processor
1/2 cup old-fashioned oats
1/3 cup confectioners’ sugar
1/2 teaspoon salt
3 tablespoons unsalted butter, melted and cooled
1/4 cup creamy reduced-fat peanut butter
1 1/2 ounces reduced-fat cream cheese, room temperature
2 teaspoon pure vanilla extract
2 tablespoons semisweet chocolate chips, melted
1. Line a 9-x-4-inch loaf pan with wax paper or baking parchment, leaving a 2-inch overhang on the long sides.
2. Combine the ground wafers, oats, sugar and 1/4 teaspoon salt in a medium bowl. Stir in the butter until everything is evenly moistened. Stir in 1 tablespoon peanut butter until mixture forms large clumps. Transfer mixture to lined loaf pan and press into an even layer. Refrigerate until firm, about 10 minutes.
3. Meanwhile, beat cream cheese with an electric mixer on medium speed until smooth and fluffy, about 2 minutes. Add vanilla, remaining 3 tablespoons peanut butter and remaining 1/4 teaspoon salt, and beat on medium speed until pale and nearly doubled in volume, about 7 minutes. Transfer to the loaf pan and spread in an even layer over cookie crust. Freeze until firm, about 10 minutes.
4. Spread the chocolate in a thin, even layer over the chilled peanut butter layer. Refrigerate until firm, about 10 minutes. When ready to serve, lift bars out of the pan using the wax paper overhang. Cut crosswise into 8 bars and serve cold.
